Yummy Summer Salad Recipes

Since I have the LUXURY of being home all summer, I have had the time and energy to try out some new recipes. Not that many people follow my thrilling blog, but the few of you who do, might enjoy these recipes too.

I found some of these on Pintrest...and I actually made them!

Avocado and Grilled Corn Salad with Cilantro Vinaigrette





Serves 4




5 Ears Corn, husk removed, brush with olive oil and grilled, remove corn with sharp knife
2 Avocado’s, diced and sprinkled with lemon juice to prevent browning
2 C. Tomatoes, red and yellow cherry variety or equivalent
1 Small red onion, finely diced
¾ C. Feta, crumbled
1 ½ C. English cucumber, skin on and chopped small dice


Add to a large bowl and refrigerate until ready to use.


Cilantro Vinaigrette


6 T. Olive oil
2 T. Sherry vinegar
1 t. Garlic powder
2 T. Fresh cilantro, minced
½ t. Salt
10 Grinds of fresh ground pepper


Add all of the above ingredients in a small glass jar with a lid. Shake really well. Taste and adjust seasoning and ratios of oil and vinegar as you desire.


When ready to serve salad, add the dressing and gently toss. 




Tortellini Spinach Salad



INGREDIENTS:
Salad:
20 ounce package refrigerated cheese tortellini
1 (14.5 oz.) can quartered artichokes
1 (9 oz.) bag fresh baby spinach
1 (3 oz.) bag sun dried tomatoes or jar of sun dried tomatoes, rinsed and drained
1/2 cup crumbled feta cheese
¼ cup diced red onion
Dressing:
9 tablespoons balsamic vinegar
3 cloves garlic, minced
1 ½ teaspoons dried oregano
1 ½ tablespoon tomato paste
Salt and pepper to taste (about 1/8 teaspoon each)
3/4 cup olive oil
DIRECTIONS:
Cook tortellini in boiling water until al dente. Drain and toss (carefully so the tortellini don’t break apart) with a teaspoon of olive oil to keep from sticking. Let cool in colander. In a large bowl, toss all the salad ingredients together after the pasta has cooled.
In a blender add all of the dressing ingredients except for the olive oil and process until smooth. Then, while the blender is running, slowly add the olive oil and blend until completely combined. If serving the salad right away, immediately pour the dressing over the salad and toss well (you may not need all the dressing). Serve.
***I did not use NEARLY as much olive oil as this recipe calls for. I just eye-balled it, till it looked/tasted good. I also kept the dressing on the side. This recipe makes A LOT of salad, and dressing. It keeps well in the fridge (sans dressing of course). ***


Bacon, Basil, and Avocado Pasta
8 oz bow tie pasta
2 medium avocados
6 slices of bacon, crumbled
2/3 chopped fresh basil
2 tablespoons lemon juice
1 tablespoon olive oil
3 cloves garlic
1/4 tsp black pepper
1/2 cup shredded Romano cheese

    directions
    1.
    Cook pasta according to package directions. Drain.
    2.
    Meanwhile, in a large bowl combine the avocados, bacon, basil,
    lemon juice, olive oil, garlic, pepper, and salt. Add the hot pasta
    and toss to combine. Transfer to a serving bowl. Sprinkle with
    cheese. Makes 4 servings.

    ***I added halved cherry tomatoes to this recipe. Love this pasta!****




    Pesto Greek Yogurt Pasta



    • Pesto:
    • 3 cups packed fresh basil
    • 1 cup packed fresh parsley
    • 3 garlic cloves, chopped
    • 1 tablespoon lemon juice
    • 1/2 teaspoon salt
    • 1/4 teaspoon pepper
    • 1/3 cup pine nuts, toasted
    • 1/2 cup olive oil
    • 1/2 cup grated Parmesan
    • Salad:
    • 1 pound gemelli or other short pasta
    • 1 cup plain 2 percent Greek yogurt
    • 2 pints cherry or grape tomatoes, halved
    Make pesto: In a food processor puree basil, parsley, garlic, lemon juice,
    salt, pepper and
    pine nuts until smooth. With motor running, add olive oil and process until
    a thick paste forms.
    Add Parmesan and pulse twice. Season with more salt and pepper, if desired.
    Make salad: Cook pasta according to package directions until al dente.
    Drain and run under
    cold water to stop cooking.
    In a large bowl, combine pesto and Greek yogurt and stir until well blended.
    Add cold pasta and toss
    to coat with dressing. Top with tomatoes. Serve salad at room temperature or
    cover and refrigerate to serve chilled.


    *****I added grilled chicken to this pasta to make it an entree. Chris and I
    both thought it was missing something.
    It was kind of plain tasting. We threw some red pepper flakes in there to
    spice it up, but it still was not my favorite
    pasta. Good. But not my fav. I also went light on the olive oil on this
    one too. I hate super oily pasta salads.*****


    Colorful Corn Saute
    2 cups fresh corn kernels, cut from cob or frozen corn, thawed
    1 cup green pepper, seeded and chopped
    4 green onions chopped
    1/4 fresh parsley
    8 oz cherry tomatoes, halved
    1/2 tsp sugar
    2 tablespoons white wine vinegar
    1/2 tsp dijion mustard
    1 tablespoon fresh basil, chopped
    1 tablespoon low-fat mayo
    1/4 tsp hot pepper sauce

    Spray non-stick cooking spray and heat to medium. 
    Add corn, pepper and onion. 
    Saute until soft (about 5 minutes). 

    Transfer to bowl and stir in parsley and tomatoes. 
    In small bowl, combine sugar, vinegar, mustard, basil, 
    mayo, and hot pepper sauce and 
    whisk together. Pour over corn mixture and toss well. 
    *This recipe is from the Junior League of Spokane 
    cookbook, Gold'n Delicious. 
    I received this cookbook as a wedding shower gift, and I 
    love it. If you can get past 
    the hokey cover photo, the recipes are pretty good. 
    ****WE LOVE THIS SALAD! If Chris had his way, we would 
    have this everyday 
    during the summer. I omit the fresh parsley. The green onion and 
    basil provide 
    enough green color in the salad, and the parsley just doesn't do 
    much for me. 
    Chris does not like bell peppers (CRAZY I KNOW!) so I leave 
    the bell pepper out 
    and add more corn. I use Tapitio for the hot sauce, and we like 
    it a little spicier 
    than 1/4 tsp. This salad tastes best after it has sat in the fridge 
    for a while. 
    It makes really good left overs.*****

    8 months & a house update

    Today I am 8 months preggo. 
    Check out the progression. 

    12 weeks, 16 weeks, 19 weeks
    5 months, 6 months

    I am still feeling really great. I try to walk 3 miles a few times a week. It has been a great way to keep me moving and catch-up with my friends, who are kind enough to walk at a preggo pace with me (this includes my hubby!). It has been decently warm here in Seattle, and I am not complaining! I love summer and all it has to offer. My hands and feet get swollen when I get really hot, but it goes away once I cool down. Other than that, the heat has not bothered me too much. If you don't count the minor melt down this afternoon :)

    I can not get enough water. Ice cold water. I think Starbucks should be paying me, as I am a walking advertisement with my reusable (venti size) cup in hand EVERYWHERE I go. And I mean everywhere. 

    We have been busy packing our house and preparing to move into our new house! It takes me a lot longer to pack being so spherical and all. Also, the whole not being allowed to lift heavy boxes is an issue... So this is how it goes: I put an empty box on the ground, fill it to the brim, Chris comes home from work and carries all the randomly placed boxes downstairs (where we are storing everything). Then he kindly asks, "What was in THAT box?" Obviously it was a little on the heavy side, but since I can't really test out the weight of the boxes...oops. :)

    The house is coming along well.  We went up there today to do a walk through with the third party inspector we hired, and things were not exactly ready for him to inspect. But we have been promised that it will all be ready for him to inspect next week. I am optimistic. Anywho, we got a chance to checkout our house! Super excited with how everything is coming together!!

    Stone is 30!!

    One of my bestest friends, Katie Stone, turned 30 this weekend!! Stone and I have been friends since I was 14 years old. I can't believe it has been that long!

    The girls and I arranged a night out to celebrate Stone's special birthday. So many people came out to party it up with this girl! Her college friends, teacher friends, and our crew were all happy to partake in the festivities. It just goes to show what a special friend she is.


    The Spokane crew made it over to celebrate! We missed Fuller, but she was busy kicking ass in Chelan completing an olympic length triathlon. 


    We love you Stone!! Here is to many, many, many more years of friendship!

    A Summer Wedding

    My friend Nicole married the love of her life, Rick, this weekend. I met Nicole in my teaching program. She is an absolute sweetheart. I would not have survived the program without her. We have remained great friends since graduating from the program and...she lives in Snoqualmie! I am very excited to have her and Rick as neighbors in our new neighborhood.

    They got married on a beautiful day in Seattle at Salish Lodge, which over looks Snoqualmie Falls. So technically, they were married in Snoqualmie...our new home! This is also where Chris proposed 5 and a half years ago. :) 


    The Snoqualmie Falls are about 5 minutes from our new house. 




    The wedding was beautiful, the bride was stunning, and we had a fantastic time! Thanks for inviting us to be a part of your special day!

    Cooper's Spokane Shower

    My sister-in-law, Janie, Grandma Barb, and my mom hosted a shower for Cooper at my parent's house. They put a lot of thought into this event, and it showed! It was absolutely fabulous! Thank you!!

    The beverages, served in mason jars. They kept the drinks cold in this antique washing tub. This was the actual "washer" my great grandma used to wash clothes for her whole family. Could you imagine? 


    The activities (I vetoed games...sorry): scrapbooking pages for Cooper's baby book, guessing who's baby picture belongs to who, and decorating onesies, bibs, burp cloths, or hats with fabric cutouts.

    Now, we just need to move into our new house so we can really get ready for his arrival! August 10th is moving day!

    Chris is 30!!

     We met when I was 18 and he was 19...now he is 30. Time goes so quickly! 

    We decided to take it easy for his big 3-0 celebration. I managed to forget to take any pictures on his actual birthday. Wife fail. But I do remember what we did...any consolation? 

    Chris worked all day. Then Chris and I went to happy hour in Ballard, before we met his sister and her husband at Ray's Boathouse for dinner. It was a BEAUTIFUL day in Seattle. 

    Stone invited Chris and I to dinner to celebrate Chris's big day. We met her the day after Chris's birthday at Ivar's Salmon House on Lake Union. The weather was unbeatable.   



    The celebration continued in Spokane. We went to dinner with Chris's parents. He discovered this little treasure (I am obviously taking his word for it, I have a few months before I get to enjoy a frosty bev). 


    To complete his birthday celebration, Chris went to Priest Lake with his Dad. They had a great weekend full of sun, boating, and beverages. 


    I love this guy. A lot. I am looking forward to the many decades of memories ahead of us! 

    Independence Day!

    Playing a little catch up here...

    Our 4th of July was very low-key. It was perfect. 

    Our day started with this delightful photo from my my dad. He takes his "pack" for walks all the time. Which is how our pups started their 4th of July holiday in Spokane. The black dog is Biggie and the brown dog is Pilot, they are my parent's dogs. 


    We went to Lake Tapps. A tradition that started in college...maybe 8 or 9 years ago? 


    I can't take credit for these treats. Lianna made them. I thought they were too cute not to document, and they tasted just as good. 




    Next year Cooper will get to experience the 4th at Lake Tapps!

    New House Update

    On the way home from Spokane we stopped by the new house. The exterior is painted! 


    All the cabinets are in! The walls are painted!

    Spokane Trip!


    Before we could leave town to visit family in Spokane, I was busy trying to finish my masters project. I am anxious to be able to pack all these books and binders away! Alas, I did not finish in time, and I had to pack all this to Spokane. But...I recently emailed my professor my rough draft!! 26 page paper and 20 lesson plans (written out in long form...like the most detailed sub plans ever! YUCK!) So glad to have that sent off. 


    Upon arrival to my parents house in Spokane, I discovered this in the guest room... Think my mom is ready to be a Grandma?! 





    The first full day in Spokane, Chris worked and I played. My mom and I went on a "walk" some might consider it a decent hike. I didn't get pictures of the steep stuff, I was focused on breathing.




    Then we hit up Paint In My Hair. Oh. My. Word. I love that place! I could have walked out with 101 things. And her prices are so reasonable, not to mention she is a super nice lady! I got these two small items for Cooper's nursery. 





    This second shutter I am going to try to make into a jewelry holder, with some hooks and knobs to hang necklaces and bracelets off of. We shall see...




    We ended the day with a nice little BBQ with my little brother, Kris, mom and dad. 



     Thursday I was able to spend all afternoon with the Snyder Family! I love this little girl!! :)




    On Friday, our friends from Seattle came over for Hoopfest...a Spokane Holiday.
